We have sold out every year since starting our farm-to-table business.  The short answer is now!  The longer answer is, in order to get it in the same calendar year, we need your order by May 1st (assuming we’re not sold out by then).  After that, there’s a good chance you will be placed on our list for the following year.  For new customers, that can be a long lead time.  After that, though, you’re on auto-pilot.  All of our current customers have first right of refusal every year.  In other words, once you’re a customer, you have an endless supply of beef until you decide not to reorder.
